Australian Bush Tucker Bites presents a Lemon Myrtle Roast Chicken Recipe.
Lemon Myrtle (Backhousia citriodora) is one of Australia’s best known bush food ingredients. Here’s one way that I use the nutritious leaves and powder in the kitchen.
You will need: a chicken, 3 teaspoons Lemon Myrtle powder, 1 teaspoon garlic powder, 40 grams of butter (optional — fresh leaves, salt and pepper)
- (Stuff the fresh Lemon Myrtle leaves into the cavity of the chicken.)
- Push pieces of butter under the skin.
- Rub mixed powders (and salt and pepper) all over the surface of the chicken and into the crevices.
- Put the chicken into the air fryer using a rotisserie attachment.
- Cook at 190C (375F) for 60–90 minutes depending on the size of the chicken.
